Tips #01 Basic coffee growth
Bean sprouts : The method of sowing is to put the seeds in moist soil for germination.
Nursery : When the double leaves have grown to a certain extent, they can be planted in the shaded nursery.
Land farming : After a few months, replant the well-developed seedlings on the cultivated land. Pictured here is a plantation in Colombia, planted under shade trees to prevent direct sunlight from hitting coffee trees.
Flowering : After about 3 years, the coffee tree will bloom white flowers.
Harvest : hand picking and mechanical harvest.
Tips #02 Coffee Bean Processing Method
Coffee processing methods are various in the market. In fact, they are divided into four categories, they are Natural, Washed, Pulped Natural (Honey Processed) and Wet Hull (Sumatra). In recent years, Anaerobic Fermentation is a very popular way which was reference from grape wine making methods.
- Natural Process -
This method is mainly used in Brazil, Ethiopia, Indonesia and Vietnam. As the name suggests, the coffee berries are processed in the sun.
- Washed Process -
This method is mostly used in Central and South America such as Colombia, Guatemala, the Caribbean and Africa such as Tanzania and Kenya. As the name suggests, the coffee berries are processed in water.
- Pulped Natural / Honey Process -
This treatment method was applied in 1990s in Brazil. It was washed with water and sun-dried. The difference between yellow honey, red honey, black honey, white honey and golden honey depends on how much pectin layer was retained.
- Wet Hull (Sumatra) -
It is mainly used in Indonesia, Sumatra and parts of Java. Among them, a layer of parchment and a layer of mucilage is hulled before it is fully dried, and then dried in the state of raw beans.
- Anaerobic Fermentation -
The coffee beans are processed in a fully sealed and oxygen deprived fermentation tank. The entire fermentation process is controlled in an oxygen-free environment. There is no special standard for this type of treatment, so many tricks have evolved, such as double anaerobic or anaerobic. Oxygen sun exposure and so on.
