To push the boundaries of what coffee can taste like, Finca Mazatlan has developed a remarkable process. First, the coffee cherries are sealed and left to undergo 72 hours of anaerobic fermentation. Then, fresh lychees are introduced to the mix for a co‑fermentation stage – a genuine microbial transformation. After that, the beans are carefully dried at temperatures kept strictly below 35°C until the ideal moisture level is reached. The result is nothing short of extraordinary. The cup profile bursts with natural notes of lychee, red berries, raspberries, peach, and hibiscus. What truly sets it apart, though, is how the flavors evolve – from the dry aroma to the wet fragrance, through the aftertaste, and even as the coffee cools. Every stage reveals something new.
