The unique drying method of Brazilian Violet elevates the flavor to more complex levels. This exclusive technique, known as Camada Grossa, meaning "Thick Layers" in English, involves stacking the coffee cherries about 5-7 cm high to slow down the drying process and promote fermentation. As the cherries gradually lose moisture, they sink, and the process is repeated by restacking them under the sun for about 10-12 days, reducing moisture content to 20%, followed by mechanical drying. The coffee beans dried using this unique method have a delicate yet thick, juicy feel, with a long-lasting aftertaste. SanCoffee, located in the Campo Das Vertentes region of Brazil, is a key organization driving the sustainable development of specialty coffee. It collaborates with over 20 farms to provide various sustainable agricultural practices, helping more than 250 coffee farming families improve their livelihoods and cultivate award-winning coffees that have received multiple COE (Cup of Excellence) awards. SanCoffee has also achieved several international certifications, including USDA Organic, Rainforest Alliance, C.A.F.E. Practices, and BSCA (Brazilian Specialty Coffee Association). Since 2000, SanCoffee has been leading the farmers of this coffee-growing region in cultivating and producing various outstanding specialty coffees.
